How to make Marbleized Cupcakes

  • I couldn't make up my mind, but in this case that isn't a bad thing! I made these marbleized chocolate vanilla cupcakes and topped them with a two-tone buttercream then smothered them in a dark chocolate ganache. I'm going to warn you these will be messy to eat but beyond worth it!
    Ingredients:
    For the Cupcakes:
    1 2/3 cups all purpose flour
    1 cup sugar
    1/4 tsp baking soda
    1 tsp baking powder
    3/4 cup salted butter (170g)
    3 egg whites
    3 tsp vanilla extract
    1/2 cup sour cream
    1/2 cup milk
    Reserve 1.5 cups of the batter an mix with 1/4 cup of cocoa powder
    For the Italian Buttercream:
    3 large egg whites
    1 cups sugar
    Pinch kosher salt
    12 ounces unsalted butter, room temperature cut into 1-inch pieces
    1/2 teaspoon pure vanilla extract
    For the Ganache:
    1/2 cup semisweet chocolate
    1/2 cup cream
