How to Make Rocky Road Cupcakes
This might be my favorite cupcake yet. It has everything, including a gooey marshmallow center!
Ingredients:
1 lb confectioner's sugar
1 stick salted butter
1 teaspoon vanilla
1/2 cup cream
3/4 cup semisweet chocolate chips plus more for topping.
1/2 cup mini marshmallows
1/3 cup toasted almond slivers
1/3 cup white chocolate chips.
For the cupcakes:
1 1/3 cups all-purpose flour
1/4 teaspoon baking soda
2 teaspoons baking powder
3/4 cup unsweetened cocoa powder
1/8 teaspoon salt
1/2 cup vegetable oil
1 1/2 cups white sugar
3 eggs
1 cup coffee
3/4 teaspoon vanilla extract
1/2 cup vanilla yogurt or sour cream
